Kitchen, nutrition and cafeteria staff know that food handling and preparation areas are among the most vulnerable areas for pests. Mice, ants and cockroaches can find everything they need in a school kitchen.
Kitchen staff should inspect the kitchen on a regular basis. Be sure to submit a work order or pest sighting report whenever pests are detected in the kitchen and food service areas.

MANAGING KITCHENS AND CAFETERIAS
Food scraps, food spills and grease residue are cleaned up daily.
Consistent efforts are made to reduce clutter.
Floors are swept and washed as often as possible.
Garbage is removed outdoors daily.
Garbage cans are lined with plastic liner bags.
Empty disposable/recyclable containers are rinsed well before storage.
Counter-tops are cleaned and dried daily.
Mops and buckets are rinsed well and hung to facilitate drying.
Stove tops and cooking/warming units are cleaned of spills, grease and sugar each day.
Hard-to-reach areas–molding, walls and flooring behind and under appliances and cooking equipment–are cleaned weekly.
MANAGING STORAGE AREAS
Incoming food and dry goods are inspected before being put into storage.
Unprotected foods are transferred into pest-resistant storage.
Jars and canned goods are stored on shelves as single units rather than in cardboard cases.
Necessary cardboard cases are sealed with sturdy tape.
All food items are stored in pest-resistant containers (glass, plastic, or metal, with tight-fitting lids).
Food carts –shelves, wheels, and wheel-wells — are cleaned.
Food storage areas are kept clean and lacking clutter.
IPM PRACTICES FOR FACILITIES
Pest management activities are communicated among responsible parties.
Drain traps are kept filled with water.
Inspection for evidence of standing water around units and pipes.
Plumbing and drain pipes are insulated to reduce condensation and kept maintained.
Light fixtures are cleaned to remove greasy buildup.
Areas around vents, utility boxes and pipes are sealed and caulked.
Areas around windows and door jams are sealed and caulked.
Window screens are clean, free of tears and holes.
Screens and ventwork for air ventilation/equipment are cleaned and maintained.
Floor drains are screened to block pest entry.
Door sweeps are used and in good working order.
